i have never tried cooking char siew before cause i already have TWO experts here that can cook that dish very well (Clifton and Mark). however, on last thursday we were rushing to go for the club meeting and mark was running late so i attempted to cook that dish.

damn!! the rack is supposed to hold the meat. How come when i put the meat on it, it just fell flat??? *think!!!* i need to hold the meat up cause this will give it the crispy texture
